*For Californians* -- Does anyone have the secret recipe for ';Juan Pollo'; chicken?

I met the person who started 'Juan Pollo'. The original restaurant is on Foothill Ave and Mt. Vernon in San Bernardino, Ca. He is Japanese and he said that he spent years in Mexico learning native marinades and rotisserie styles of cooking chicken. Of course, he wouldn't share his recipes. I was watching them fix the chicken early one day; I noticed lemon and orange slices in the marinade. I would pay big money for that marinade. Other ';Pollo'; companies use chemical dyes and rubs on the outside of the chicken.
