You can stir fry it, just leave the breading off. Chop the chicken into bite-sized pieces, add a dash of salt and white pepper (or black pepper) so they will have some flavor, and heat a skillet on medium to medium-high. Add a bit of cooking oil or butter (up to 2 Tablespoons) to the skillet and stir it in the hot oil until nicely browned. Then you just add it to the sweet and sour sauce.

I have a similar recipe and instead of doing the cornstarch water mixture, coat cut up chicken breast with the corn starch. Use 1 tbs of vegetable oil to brown the chicken. I then put the sauce mixture in the pan and the cornstarch from the chicken will thicken the sauce, so it saves 2 steps.
you could grill or bake the chicken instead. grilling would probably be better though
YOU FIND THAT THE CHOWS WILL BOIL OR STEAM CHICKEN FIRST.
maybe in the frying pan it's sill fry but it has less grease
