Does anyone have a great recipe for roasting a chicken?

Beer can chicken


(Buy the rack near the soda display @walmart for less than $2)


Whole chicken cleaned


Basted w/olive oil


Covered with Tony Chacon's Louisiana spice mix


Garlic powder, salt n pepper


You put 1/2 can of beer, or coke, or dr pepper is really good too, or root beer in the rack, sitting in a pan, I use 9'; square pan w/ 1/2 cup water in pan


Set the chicken up on the rack/can %26amp; cook in oven @ 350 for an hour.


Can also be grilled on gas grill. It's delicious, skin crispy, all the fat drains off, and the meat is juicy %26amp; tender. Enjoy!Does anyone have a great recipe for roasting a chicken?
Chop some garlic ( I use 5 or 6 cloves) put it under the skin of the chicken along witih some fresh rosemary. Drizzle olive oil over the bird and bake for 90 minutes at 350 covered. Uncover the last 30 minute.Does anyone have a great recipe for roasting a chicken?
my family calls this one ';defective chicken'; it is so tender it falls apart with just a touch of a fork-





1 whole fryer/roaster at least 4-5 lbs


sea salt


garlic powder


fine ground black pepper


extra virgin olive oil





Preheat oven to 300 degrees-


Remove giblets (if included) and wash bird in cold water, remove any pinfeathers in skin. rub with olive oil and arrange bird (breast up) in roasting pan. lightly salt all over and repeat with garlic and black pepper.


tent roaster with aluminum foil if it has no lid and place in oven for 1 1/2 hrs.


when bird is checked it should be loose at all joints- when it reaches this point, uncover and increase heat to 375 and roast until skin is golden brown.


Also it comes out really well if several green chili's (fire roasted peeled and seeded) are laid over the breast while roasting.
Rub the chicken with olive oil all over. Sprinkle with: Garlic Powder, Celery Salt, Parsley, and Onion Powder. Place a half onion in the body cavity for more flavor if you wish. Cover the tips of the wings with foil to prevent burning. Place in oven and put heat to 350. DO NOT PREHEAT OVEN OR COVER CHICKEN. Putting the chicken in a cold oven will produce a nice crispy skin. If the skin gets too dark put a small piece of foil over the breast only. Cook for 1 to 1 1/2 hours depending on size of the bird.
