I make my own boston baked but that takes a day
the alternative to that would be a can of beans;
chop one small onion
1/4 cup brown sugar or molasses
some ketchup
some mustard
stir all together and put in a casserole dish, cover and bake on 250 degrees for 4 hoursDoes anyone have a bean recipe to go along side baked Chipotle Chicken?
How about frijoles charros:
First buy fresh pinto beans wash them thouroughly and put them to boil with enough water. about 4 garlic cloves for a pot wail till they are soft (* the beans have to have at least some water left it's going to be like a soup) it will take about 30 min. to 45min ...
add about one chopped onion maybe less
add about 1/2 a cup of cilantro
add about 1 cup of cooked bacon (chopped)
add about 1 1/2 choped jalapenos (if you like spicy food add more if not add less)
add about 1 or 2 tomaotes chopped
add fav. sausage chopped as well
salt and pepper to taste and enjoy...
just get a can of Ranch Style Beans you cant beat em
black beans. Heat up a can of black beans, fry them in a pan with some onion and salsa. Yummy.
Frijoles de Nuevo Mexico
2 or 3 cups pinto beans
4 slices bacon, diced
1 medium onion, minced
1 Tablespoon salt
Water
Pick through beans removing rocks. Put beans, bacon, onion and water in pressure cooker for fast beans, in slow cooker for all night cooking.
Bring pressure up to 15 pounds and lower heat til guage just jiggles for 30 minutes. Remove from heat and cool til lid will come off. Put back on heat and add salt. Heat to simmer. If desired add some diced Chipotle to this now.
In slow cooker, put on at high and ignore for 12 hours other than to add boiling water as needed. At end of 12 hours add salt and if desired Chipotle.
I do not recommend adding the pepper if main dish is also peppered. You need a neutral.
Nice tossed or green goddess salad would be great with this!!
