Ok... So I have 1 chicken breast leftover from last night (uncooked). Probably close to half a pound. I have one person outside of myself to feed tonight. Any ideas on what to make with a single one for 2 people thats NOT pasta? We just had pasta and Im not in the mood for it again lol...1 chicken breast, 2 hungry people...Recipes, please!?
No pasta, huh. Ok. Cut the chicken into chunks or long thin slices. Scrounge up some gravy from a package in the cupboard. Throw it all in together and saute in some olive oil or whatever you have. If you have a can of white bean or really any kind of beans, drain and rinse them and toss them in too. That will really expand your protein and should be enough for both of you. You can serve if over rice, potatoes, pasta or whatever. pound the breast with a meat tenderizer so that it is thinned out - i recommend that you put it between sheets of wax paper or plastic wrap before you pound it out.
season with salt and pepper, dredge in flour to make a light crust (season the flour if you want, with your favorite spices) and fry till crispy in a little olive or veggie oil in a saute pan.
now that you have your chicken cutlet, you can do oodles with it.
Slice it into strips and add to a wrap or roll for a cutlet sandwich (with sauce, with veggies, or not).
Ever hear of chicken and waffles? Toast up some breakfast waffles, split the breast in half and serve on top of the waffles with maple syrup. Sounds weird, but it is FABOO.
Cook it up. shred it, saute onion and pepper into it. Serve with salsa and tortilla. For side dish you can make rice or beans.
You could make chicken Nachos.
You could do chicken Pelau. It is a Caribbean rice dish.
You could also thin strip cut it and batter it for chicken strips, make lots of french fries for a side
Slice it in half.. pound it out a bit.. add a slice of swiss cheese, a slice of thin ham, rol it and pin it with a toothpick. coat it in an egg crumb coating and bake it.
Cut chicken into cubes and cook(boil. you can use the water off of it later in the recipe)
add to 1 cup rice (2 cups water or broth)
1 can creamed soup (mushroom, celery, chicken) DO NOT THIN.
1/2 cup peas
1 small onion (or 1/2 large) diced
1 stalk celery diced
pepper to taste
mix all ingredients together and bake for about 1/2 hour or until rice is done. sprinkle with cheese and bake for about 10 min longer

Whizz in a blender 2 onions
half a lemon juice
10 peppercorns
salt, pepper, basil leaves
some lime
some chillies.
Corriander seeds, cumin seeds, and a dash of cinnamon
Fry the chicken and the resulting paste, add a tin of coconut milk, reduce down to thick gooey paste and serve on white rice
Preheat a frying pan sprayed with Pam. Slice the chicken very thinly. Throw it in the pan. Season it with some Crazy Dave's (or some other salt/pepper/garlic blend), or a little Season All (I usually do one shake of each) and a little bit of taco seasoning. Cook til no longer pink. Meanwhile, preheat a nonstick skillet. Throw a full size tortilla in. Cover half of it with cheddar or mexican cheese. Spread a few strips of chicken over it. Cover with a little more cheese. Fold tortilla in half. Heat until lightly browned on each side. Serve with sour cream or hot sauce.
Make a chicken stir-fry. Cut chicken in small bit size pieces. (easier to freeze for 1/2 hour then cut). Sir fry the chicken, then loads of vegetables, onion, garlic, celery, green peppers, mushrooms, brocolli. Add about 2 cups chicken broth, a bit of soya sauce %26amp; worchestershire sauce if you have it. Simmer 20 min. covered. Thicken with 2 tbls. cornstarch mixed with 2 tbls. cold water. Stir until thickened. Serve over cooked rice.
fry some egg up, cook some rice. Put the egg with the rice. If you have some peas or soy beansprouts, fry them up and mix them in as well. Cut the chicken in small bits and cook, then add to rice. Get some sweet%26amp;sour sauce. Nice chinese.
or you can do a cold chicken and rice salad. I don't know what other ingredients you've got so i can't give many pointers
chicken tacos with soft corn tortillas. chicken chili. chicken enchiladas. chicken ceasar salad and garlic bread. fried buffalo chicken strip sandwiches. if you need more suggestions or recipe for one of those throw up another question. chicken potpie. chicken stew. stuffed chicken breasts w/ spinach and mushrooms. chicken stuffed bell peppers.

cook the chicken. shred it up and mix it with mayo, mustard, salt and pepper. spoon it on to some bread and wala!! Jazz it up with whatever other veges you have in the fridge! my boyfriend and i make this all the time when we are in a hurry for dinner!
Cook the chicken and make chicken salad sandwiches. Once the chicken is chopped up and you add some extras (celery, onion, etc) there will be more than enough to serve 2 people. Put it on some nice thick bread slices and a salad on the side.

fajitas! slice it up with some bell peppers and onion throw them in a fry pan w/ some oil salt and pepper and eat with tortillas.
