How can you make diced chicken in a crock pot? (crockpot, recipe)?
Of course you can do this. You can also cook the chicken on the stove. If you are planning on using the chicken for a variety of recipies, my suggestion would be to cook it in chicken broth, veggie broth, or water if you do not have broth. Cook the chicken in whole pieces. When you go to defrost it to use in another recipie, cut into pieces. The chicken will hold more of its natural tenderness and juices if left whole.
Crock pot: low heat; add broth or water *you could also add herbs at this point; recommend to salt/pepper your chicken; place chicken in whole pieces (even if the bone is present); cook on low heat until at desired tenderness - approx. 1-2 hours without bone, 2-4 hours with bone.
Stove: in large, deep pan, heat water/broth. Add chicken. Cook over low heat approx. 25-40 minutes. Longer with bone in.
Also. if you are going to cook the chicken all the way through, make sure you defrost it properly, as the chicken may become tough if recooked too long or before it is defrosted.
If you are using the crock pot to cook the chicken, cook it low and slow. This will help the chicken to remain tender and not to become tough.
Place the amount/serving in a freezer bag. Do not place in the freezer until the chicken is room temperature. Closing the bag and placing it in the freezer will shock the chicken, causing it to become chewy and/or frost bitten when you go to use it next.
Because the cooking process allowed the meat to remain tender, you can cut it into pieces once defrosted or even pull the meat off of the bone if it is a leg/thigh.

It really shouldn't matter if the chicken is already cooked or not. As long as you time it so that you throw the diced chicken in to finish cooking when everything else will be done. Chicken really doesn't take that long to cook. You should make sure it is cooked thoroughly so that nobody gets sick though.
