Chicken Noodle Soup Recipe?

Does anyone know any good recipes for chicken noodle soup? My boyfriend's been sick and I wanted to do something nice and make it for him since he's usually the one that cooks.Chicken Noodle Soup Recipe?
4 small skinless chicken breasts, diced


2 pints boiling water


2-3 chicken stock cubes


1 medium onion, chopped


80g garden peas (frozen is fine)


Black pepper


2 teaspoons dried parsley (or handful of fresh parsley, chopped)


65g rice noodles





Directions


Put the stock cubes into a med-large heavy bottomed saucepan.


Boil the kettle and pour boiled water over the stock cubes - stir well.


Add the chicken, onion and seasonings.


Bring to the boil and reduce the heat to a simmer. Cook for around 30-35 minutes or until the chicken is tender.


Add the peas (the carrots would go in now) and simmer for a further 10 minutes.


Stir in the noodles, leave for 5 minutes and serve.Chicken Noodle Soup Recipe?
I do not have a recipe, I just see whats on hand and go form there.








First you need chicken... small ones can be boiled and used or just legs. We need flavor from the meat, keep the juice you boiled the chicken in, I add onions, celery to my stock .





I add spaghetti or egg noodles depending whats on hand. Sometimes I even put rice in it.





Choose your veggies, there is ton of frozen mixed varieties. I use fresh carrots and frozen peas





Spices I like, parsley, thyme, pepper, salt, adobe,





My mom used potatoes.





Now as you drain chicken and clean the meat. Keep your broth. If using fresh veggies, add to broth, then your starch. Let simmer til everything is tender. I love adding dumplings. Take jiffy biscuit mix and add on top of boilling soup cook five min. then shut off and finish 5 min. The next day I turn my soup into a pot pie by adding a thickener or instant mashed potatoes. Good luck and I hope he is feeling better.
Its super easy.........just boil some chicken white or dark what ever you like.add some cut up onion and salt and pepper......cook it for about 2 hours and take out the chicken......then add any veggys you like.....potatoes corn and carrots are my favs...... then when veggys are done toss in some noodles of your choice and cook noodles ....then add the chicken back into the broth .......then there you got it..........SOUP..........its super easy .
When I make chicken soup from scratch, I go the easy way...





Chicken Stock


Chopped Carrots, Celery, and Onion


Spiral Noodles (gives it more bite than the flat, long ones!)


Pan-cooked, chopped Chicken Breast.





I also cook the Chicken breast pieces in Extra Virgin Olive Oil (just a drizzle!) and Italian Dressing.
