1- 5-6pdroasting chicken kosher salt,ground pepper,fresh thyme,1 head garlic cut in half 2tbls. butter,1 spanish onion 1cup chick stock 2tbls.flour.remove giblets,clean chick,pat dry,place chick in roasting pan,salt%26amp;pepper chick inside and out stuff the cavity with bunch of thyme and 1 lemon cut in halfand all garlic.Brush outside of chick with butter and sprinkle again with salt and pepper tie legs together fold wings back scatter onion slices around chicken roast 11/2 hours or until juices run clear.remove to a platter and cover with foil while you prepare gravy.remove all fat from the bottom of the pan reserve 2tbls in a small cup and chick stock to the pan let boil for 5 min. add chickfat with flour and let boil till thick season to tasteDo you still want the recipe for the barefoot contessa chicken?
