Does anyone have a good recipe for fried chicken that isn't too greasy? Whenever I make it, it comes out greasy and kind of gross-tasting---you know--like KFC! ;-).Non-greasy fried chicken recipe?
try the oven baked fried chicken recipes then ^_^ I find oven baked fried chicken is always less greasy, and i think more healthier than to the ones fried in oil
oven baked fried chicken
* 1 cup flour
* 8 tbsps creamy salad dressing (I used Caesar)
* a dash of salt
* 1 whole small-medium chicken, cut pieces OR chiken thighs/wings
* 1 1/2 ground croutons
- Preheat oven 350 F
- Lay alumunium foil on a jellyroll baking pan
- In a bowl, combine 1/2 cup of the flour with the salt.
- On a plate, place the creamy salad dressing
- In a separate bowl/plate, combine 1/2 cup of flour with the ground croutons
- Washed clean chicken pieces, makes slices/pierce chicken all over with top of knife
- Roll chicken pieces in the first bowl, then roll on the plate, then roll back in the 3rd bowl. Place coated chicken on the pan
- Bake for 50-60 minutes
Oven Fried Chicken
- 1 cup plain low-fat yogurt
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1 clove garlic, minced
- 6 skinless chicken breast halves
or 6 skinless chicken thighs (1-3/4 to 2 pounds)
- 1 cup seasoned bread crumbs
- 1 tablespoon margarine, melted
DIRECTIONS
Preheat the oven to 400 degrees F.
Combine the yogurt, paprika, thyme, salt, pepper, and garlic in
a large bowl; mix well. Coat the chicken with the mixture. (The
chicken may be covered and refrigerated overnight or baked immediately.)
Prepare a shallow roasting pan or jelly roll pan with a nonstick
pan spray. Combine the bread crumbs and margarine in a shallow
dish. Coat the chicken with the crumbs; place in the pan.
Bake breasts for 25 minutes, thighs for 30 to 35 minutes, or until tender.
Baked BBQ Fried Chicken
Servings: 12
Ingredients:
3 pounds skinless, boneless chicken breast halves
- cut into strips
3 eggs
1 cup water
1/2 cup milk
2 tablespoons salt
2 tablespoons black pepper
6 cups all-purpose flour
1/4 cup salt
5 teaspoons black pepper
2 tablespoons minced garlic
2 tablespoons dry mesquite flavored seasoning mix
4 cups oil for frying, or as needed
1 teaspoon butter
1 (12 ounce) bottle barbecue sauce
Directions:
1. In a large bowl, whisk together the eggs, water, milk, 2
tablespoons salt, and 2 tablespoons pepper with a fork
until smooth.
In another large bowl, stir together the flour, 1/4 cup
salt, 5 teaspoons pepper, garlic, and mesquite seasoning.
2. Fill a large heavy skillet or wok halfway full with oil.
Heat to 365 degrees F (180 degrees C).
Use a fork to pick up one chicken strip at a time,
and dip it into the egg mixture, then into the flour
mixture, back into the egg mixture, and into the flour
mixture again.
Place coated strips into the hot oil to fry.
Do not over crowd, just cook in batches.
Once chicken is browned on one side, flip over,
and brown on the other side.
3. Preheat the oven to 300 degrees F (150 degrees C).
Butter one 12x20 inch glass baking dish, or two 9x13 inch
baking dishes.
Pour enough barbeque sauce into the dish to coat
the bottom.
Arrange fried chicken strips in rows in the prepared dish.
Pour remaining sauce over the top.
4. Bake for 10 to 15 minutes in the preheated oven,
until the sauce is caramelized onto the chicken.
Oven-Fried Chicken Breasts
a.. 1/2 cup whole-wheat bread crumbs
b.. 1/4 cup wheat germ
c.. 1 teaspoon onion salt
d.. 1/2 teaspoon sugar
e.. 1/4 teaspoon ground red pepper
f.. 4 boneless, skinless chicken breast halves
g.. 2 eggs, beaten
Heat oven to 400 degrees.
In a shallow bowl combine bread crumbs, wheat germ, onion salt, sugar and red
pepper.
Place a wire rack coated with cooking spray on a baking sheet. Coat chicken
breasts with egg and then dredge in the bread-crumb mixture; press to cover with
crumbs. Shake off excess and place breasts on wire rack. Coat with cooking spray
and bake 35 minutes without turning, or until a thermometer inserted in the
thickest part registers 180 degrees.

This method makes a good krispy chicken. Add salt, pepper, red pepper, white pepper, onion powder, garlic powder, and desired spices to a regular bread flour. All purpose flour will also work. Salt level should be about 7% (about 2 tsp. per cup). You can buy the seasoned flour mix or look up recipes on the Internet. Make up at least 6 cups of the seasoned flour. Mix two cups of this seasoned flour with 2 cups of cold water (add 1-4 ice cubes) and blend until smooth. Dip the washed chicken in this batter and then in the same dry seasoned flour. Drop into a fryer set at 360 F for 10 -12 min for bone in chicken or 5-6 min for chicken strips. Caution: fry oil will spatter a bit more with this method. You may want to make outside if you can.

If it's coming out greasy, you don't have the heat up high enough when you're cooking it.
Turn up the heat a bit and it should come out less greasy.
If you deep fry it then you will not have greasy chicken, it will be crisp and wonderful........too one thing I like is shake and bake.......
Fry the chicken in oil heated to 350潞 measured with a frying thermometer, or a 2'; square of white bread. The bread should take about 60 seconds to turn golden.
Add the chicken to the oil one piece at a time and slowly. Only place a few pieces in the skillet. Keep space between the pieces. Cook 2 or more batches if needed. Adding chicken too quickly or crowding in the pan will cause a large drop in the temp causing the chicken to absorb oil.
Kentucky Fried Chicken
This chicken is fried in a pressure cooker.
12 pieces
1录 hours 10 min prep
1 egg, beaten
2 cups milk
2 cups all-purpose flour
4 teaspoons salt
2 teaspoons black pepper
1 teaspoon msg (monosodium glutamate-you can use Accent Flavor Enhancer)
6 cups Crisco cooking oil
2 frying chickens, with skin, each cut into 6 pieces
In a small bowl combine the egg and milk.
In a seperate bowl, combine the remaining four dry ingredients.
Dip each piece of chicken into the milk mixture until fully moistened. Roll the moistened chicken into the flour mixture until completely coated.
Pour the oil into the pressure cooker and heat over medium heat to about 400.
In groups of 4 or 5, drop the chicken pieces into the oil and lock the lid into place. When the steam begins shooting through the pressure release, set the timer for 10 minutes.
After 10 minutes, release the pressure according to manufactuer's instruct ions, and remove the chicken to paper towels or a metal rack to drain.
Repeat with remaining chicken.
TIDBIT: If you prefer not to use MSG, you may substitute an additional 1/2 TBS. of salt. Be aware however that using MSG produces the best clone of KFC's fried chicken.
Use your favorite recipe, except for this time make sure your oil is at the proper cooking temp. If you try to throw in the food before the oil is hot enough it tends to soak into whatever breaded item you are trying to cook...rendering it a greasy soggy mess.
The reason it comes out greasy, is that the shortening is to cool or to much for the fry pot start with thighs and legs first .These take longer. then cook the white meats A cast iron skillet work best the cast iron holds the heat better. Use one that is big enough to hold a whole chicken, with at least 3/4'; space around each piece For more info go to food network.com and go to good eats section.. there is an excelent rec. there.
