Seafood Pizza





1 package (6-1/2 ounces) pizza crust mix


3 tablespoons butter, divided


2 tablespoons all-purpose flour


3/4 cup milk


1/4 cup chicken broth


1/4 cup shredded Monterey Jack cheese


1/4 cup shredded Swiss cheese


1/4 pound uncooked bay scallops, chopped


1/4 pound cooked shrimp, peeled, deveined and chopped


1/4 pound imitation crabmeat, chopped


2 cups (8 ounces) shredded part-skim mozzarella cheese


Paprika, optional





Prepare pizza dough according to package directions.


Press onto a lightly greased 12-in. pizza pan; build up edges slightly. Prick dough thoroughly with a fork.


Bake at 400掳 for 5-6 minutes or until crust is firm and begins to brown.





Meanwhile, in a large saucepan, melt 2 tablespoons butter over medium heat. Stir in flour until smooth.


Gradually stir in milk and broth. Bring to a boil;


cook and stir for 2 minutes or until thickened.


Reduce heat. Stir in Monterey Jack and Swiss cheeses until melted. Remove from the heat.





In a large skillet, melt the remaining butter over medium heat.


Add scallops; cook and stir for 3-4 minutes or until firm and opaque. Stir in the shrimp, crab and 3 tablespoons cheese sauce.


Remove from the heat.


Spread remaining cheese sauce over the crust.


Top with the seafood mixture,


sprinkle with mozzarella cheese and paprika if desired.


Bake for 13-16 minutes or until golden brown.


Let stand for 5-10 minutes before cutting.


Yield: 8 slices, 4 servings.








Asian Shrimp and Avocado Salad





3 ounces ramen noodles, any flavor (1 package)


2 large avocados, peeled and coarsely chopped


2 tablespoons lime juice (the real thing, please!)


3 small green onions, sliced


1/2 cup sour cream


1 tablespoon wasabi powder


3/4 teaspoon salt


1 lb cooked shrimp, peeled and coarsely chopped


1 head napa cabbage, Chinese cabbage or romaine lettuce, shredded


1 small cucumber, diced


4 plum tomatoes, each cut into thin wedges





1 Preheat oven to 350掳F


2 Remove flavor packet from soup mix and reserve for another use.


3 Bake noodles in shallow pan 20 minutes or until golden brown; remove from oven %26amp; set aside.


4 Mash avocado and lime juice with fork in medium bowl.


5 Stir in green onions, sour cream, wasabi powder and salt until blended.


6 Toss shrimp, cabbage and cucumber in large bowl.


7 Place on large serving platter.


8 Top with avocado dressing; sprinkle with noodles.


9 Arrange tomato wedges around salad.


10 Serve with pita wedges or tortilla chips %26amp; enjoy!








Strawberry Spinach Pecan Salad





1/3 cup white sugar


1/2 cup salad oil


1/3 cup cider vinegar


2 tablespoons sesame seeds


2 tablespoons poppy seeds


1/2 teaspoon worcestershire sauce


2 teaspoons finely minced onions (or onion flakes)


20 ounces fresh spinach leaves


fresh strawberries


pecans





Combine first 7 ingredients at least 1 hour in advance and shake well. Simmer pecans in butter with a little sprinkle of sugar until soft.


Tear spinach leaves into bite size pieces.


Slice strawberries lengthwise.


Add salad dressing just before serving and toss well.





The dressing is a large recipe.
