Ingredients
2 4-ounce skinless, boneless chicken breast halves
1/8 teaspoon salt
1 teaspoon cooking oil
1 medium orange(s)
1 tablespoons orange marmalade
1/8 teaspoon ground ginger
Dash crushed red pepper (optional)
Directions
1. Sprinkle chicken with salt. In a medium nonstick skillet cook chicken in hot oil over medium heat for 8 to 10 minutes or until chicken is done (170 degree F), turning once.
2. Meanwhile, finely shred enough of the orange peel to measure 1/4 teaspoon; set aside. Peel orange. Cut orange in half lengthwise; cut crosswise into slices. In a small bowl combine orange peel and orange slices. Add orange marmalade, ginger, and, if desired, crushed red pepper; toss gently to coat.
3. Remove cooked chicken from skillet; cover and keep warm. Reduce heat to low. Add orange mixture to the skillet. Cook and stir for 30 to 60 seconds or until marmalade is melted and mixture is heated through. Serve the orange mixture over chicken. Makes 2 servings.
For 4 servings: Prepare as above, except use a large nonstick skillet (in step 1) and finely shred enough of the orange peel to measure 1/2 teaspoon (in step 2).

2 or 3 cloves garlic, peeled and thinly sliced
1 tablespoon butter or margarine
1 teaspoon finely shredded lime peel
2 tablespoons lime juice
1/4 teaspoon ground ginger
1/8 teaspoon crushed red pepper
1 orange
Directions
1. In a large skillet cook chicken and garlic in butter over medium heat for 8 to 10 minutes or until chicken is tender and no longer pink, turning chicken once and stirring garlic occasionally.
2. Meanwhile, in a small bowl combine lime peel, lime juice, ginger, and red pepper; set aside. Peel orange. Reserving juice, cut orange in half lengthwise, then cut crosswise into slices. Add any reserved orange juice and the lime juice mixture to skillet. Place orange slices on top of chicken. Cook, covered, for 1 to 2 minutes or until heated through. Spoon any reserved drippings over chicken to serve. Makes 4 servings.
