My inlaws are coming for supper and oops...I focused too much on Christmas dinner and forgot to even think about tonight. HELP! I am thinking of some chicken breasts, rice and some veggies and need a VERY EASY recipe that doesn't require ingredients people normally don't keep at home (unless they are chefs). Please HELP! The easiest chicken breast recipe ever:
Take boneless breasts, sprinkle some good Seansons dry Italian dressing mixture over them, then sprinkle with some Parmesan cheese. Bake at 400 for 22 minutes. Tender, juicy and delicious.
I would hope you have some frozen veggies, and some rice? You could make a veggie stir fry if you have some soy sauce or teriyaki sauce.Does anyone have a VERY EASY chicken breast with rice and some veggies recipe?
Chicken - Season with salt and pepper, really basic. Get a beer (doesnt matter what kind) and pour enough for the chicken to sit in about a half inch of it. Slow cook on a low/med setting until chicken is totally cooked. It comes out beyond tender and moist with a really good flavor.
Make regular rice and just season with some bell peppers, onion, salt and pepper and a little bit of garlic and butter!
(OR JUST GET SOME SPANISH RICE A RONI!!)
And for vegitables, steam them, but not too long so that they get all mushy, but enough to take away most of the crisp.(microwave with water in bottom of dish, or steam on stove in pots). I really like to do broccoli, and then i mix butter and sourcream with a little bit of salt pepper and onion mixed into it, and just drizzle it over the vegitables for a nice subtle flavor.
Chicken is my specialty and my cooking is always a hit, so trust me its tasty!
Order food from outside
Chic breasts: thin coating of oil or butter (about 2 teaspoons each breast), put in foil, add garlic and herbs, add onion slices, mushrooms and/or celery chopped if you desire, wrap up, with a small vent hole bake at 350F for an hour.
Rice: cook per instructions on package, use a mix of water and chic broth instead of straight water.
Vegs: cook per instructions on package
Sauce; heat condensed cream soup add only half the recommended extra fluid - use cream or milk instead of water. I like cream of mushroom.
Wine: Dry Riesling
1 can cream of mushroom soup
1can cream of chicken soup
1 box uncle ben's wild rice mix
2 large chicken breasts or 4 small chicken breasts
mix first 3 ingredients together (including the spice pack in the rice mix) and pour in baking dish, place chicken breasts on top, bake covered for 1 hour at 350 degrees...yummy. I also serve with steamed broccoli topped with lemon butter.
Boneless skinless chicken breasts on bottom of casserole. Pour 3 cups of chicken broth over them, add 1 1/2 cups of dry rice to that. Cover and cook at 350 for about 1 hour 20 minutes. Cook a large can of LeSeuer peas. Drain peas and serve over rice . Enough for 4 servings.
one of my favorite meals is when my wife bakes boneless chicken breasts in with rice and chicken broth. she sprinkles a little paprika on the chicken. not sure how long she bakes it for or on what temp but the rice cooks in the chicken broth and soaks it up. good stuff!
oh, forgot to mention vegetable....steamed baby carrots. melt a little butter on them before serving and crack some black pepper on them as well.
just shake them in the shake and bake pack and baked them
I have one that is Chicken Casserole
Chicken Breast
1 can of Cream of Chicken
1 8 oz. of Sour Cream
Townhouse Crackers
Butter
Cook Chicken breast (broil or bake) in a bowl mix sour cream and cream of chicken. When chicken is done shread and put in to the mixture, pour the mixture into a glass dish, in another dish crush crackers and pour butter over them, to this topping on top of the chicken, cream of chicken and sour cream mixture. Bake in oven at 350 for 20 minutes. VERY GOOD!!! Let me know if you'll use it.
Stir-fried Chicken with Broccoli
2 tbsp vegetable oil
1 lb skinless boneless chicken breasts, cut into strips
2 cups broccoli flowerets
1 clove garlic, minced
1 can cream of chicken and broccoli soup
1/3 cup water
1 tbsp soya sauce
1 tomato cut into chunks (optional)
In skillet over medium heat, heat half of the oil Stir-fry chicken until browned. Remove from skillet; set aside.
In same skilet, heat remaining oil and add broccoli and garlic. Stir-fry until tender-crisp.
Stir in soup, water and soya sauce. Add tomato. Bring to a boil. Return chicken to skillet and turn the heat to low. cover and simmer 5 minutes or until vegetables are tender.
Serve with rice.
makes 4 servings.
or
Baked Chicken Broccoli and Rice
4 chicken breasts halves or legs
1 can cream of chicken and broccoli soup
1 1/2 cups water
1/4 cup uncooked long grain rice
pepper and paprika to taste
Remove skin from chicken (if desired)
in oblong baking dish, combine soup, water and rice. Arrange chicken on top; sprinkle with pepper and paprika
Bake at 375 without cover for 50 to 60 min or until chicken is no longer pink and rice is tender.
Makes 4 servings
I make both of these all of the time and everyone loves it.
You don't have to use that exact kind of soup, you can use cream of broccoli or cream of chicken or whatever you like
I have a great easy scalloped potatoes recipe. Simple and easy.
I don't have measurements because I have been making it so long that I just go by eye
you need:
potatoes - thinly sliced
grated mozzarella or swiss cheese
onion - minced
garlic - minced
1/2 cup of milk
Italian seasoning (optional)
cream of mushroom, or cream of broccoli, or whatever cream of soup you have
layer the potatoes, cheese, onion and garlic in a baking dish
start with potatoes, then cheese, then onion/garlic, until you reach the top
mix soup and milk and then pour this over the top and then cover and bake at 375 for 1 hour
adjust the soup and milk and other ingredients to make it for more people.
I would say 2 medium potatoes per person.
I take this to pot lucks, and everyone loves it and always wants the receipe.
