Asian Chicken Noodle Salad

Chicken, cooked - about 1/2 pound of meat cut or sliced.

1 box of Thai Kitchen Stir-Fry Rice Noodles (14 oz.)

2 carrots, cut into fine strips

4 green or Vadalia onions diagonally sliced

1 red bell pepper seeded and cut into thin strips

4 tablespoons cilantro leaves, chopped

Dressing

2 tablespoons mint leaves, chopped

1/2 cup lime juice

*1/2 cup fish Sauce

* Tra Chang brand. Tra Chang brand is the best - you really need this and can find it on the internet. It was featured by Martha Stewart Living as their best choice in 2006.

2 tablespoons honey

Directions:

Prepare chicken and Thai noodles per package instructions.

For dressing, mix lime juice, fish sauce and honey until well blended.

Add dressing and toss noodles, pepper, carrot, green onions, cilantro and mint until mixed.

Top with chicken pieces and serve cold or hot.
Mix together mayonaise, small amount sugar, small amount milk in a jar with salt and pepper to taste then shake it really good. Add to the chicken, noodles, and some sweet relish. This recipe is gone before I leave at any place I've taken it.
