How about a nice frittata, here's an easy recipe:
6 eggs, beaten
1-ounce Parmesan, grated
1/2 teaspoon black pepper
Pinch salt
1 teaspoon butter
1/2 cup chopped roasted asparagus
1 tablespoon chopped parsley leaves
Directions
Preheat oven to broil setting.
In medium size bowl, using a fork, blend together eggs, Parmesan, pepper, and salt. Heat 12-inch non-stick, oven safe saute pan over medium high heat. Add butter to pan and melt. Add asparagus to pan and saute for 2 to 3 minutes. Pour egg mixture into pan and stir with rubber spatula. Cook for 4 to 5 minutes or until the egg mixture has set on the bottom and begins to set up on top. Sprinkle with parsley.

SWISS CHEESE AND Preparation, Easy
CROUTON OMELETTE; Cost, Inexpensive
Needed: Preparation Time: 20Min.
4 Slices of white bread
7 Eggs
1/2 cup of half/half (or) water
3/4 cup shredded Swiss Cheese or Jarlsberg
Dash salt
1 tbsp. butter or margarine
Dash paprika
Chopped chives for garnish, optional
1) Cut bread into small cubes. Place bread cubes in a skillet. Toast over medium heat, shaking constantly, until lightly browned and crusty. Remove from skillet and set aside.
2) In a bowl, crack eggs and whisk together with a large fork. Add half/half or water, cheese and salt. Stir to Combine.
3) In a skillet or omelet pan, heat butter. Add egg mixture. Cook,stirring gently and lifting sided of omelet until brown underneath; but still creamy on top.
4)Add Toasted bread. Sprinkle with paprika.
5) Sprinkle with chopped chives, if used.
Serve immediately.

TIPS:
If you do not have a pan large enough to accommodate 7 eggs, make 2 omelets instead. The preparation is easy to divide mixture in half.

boil pasta (thin spaghetti) and let cool
in a bowl add eggs, little cream season with salt-pepper-garlic powder
beat in small dice sweet or mild onion-red pepper.......
add cheese and mix in the pasta until pasta is coated with eggs
pour into a large pan that is coated lightly with butter or oil bake in a 350 temp oven until the eggs are cooked for about 25-35 min in the last 10 min add extra cheese on top

You can make them by scratch, or you can get the box of mix at the store, just add eggs, oil, and milk, stir and heat on a pan. I'm not sure about the nutrition facts, but if you get a box, they would tell you.

break the egg inn half on top of the pre-heated pan mix it with a table spoon and you are done!!
