A very simple chicken and potato recipe, any ideas?

I remember a co-worker once eating a very simple lunch. She said it was cut up chunks of potatoes and pieces of chicken boiled in chicken broth. She added some pasta and peas and that was it. It smelled heavenly. Is it possible that those were the ONLY ingredients? Does anyone else have some similar simple recipes using only chicken, potatoes, and broth?A very simple chicken and potato recipe, any ideas?
Sounds like you are trying for soup....experiment. Just throw in what you like. Try this one cubed boneless chicken breast; garlic; onion; cubed potatoes; chicken broth; carrots; and some pasta. Remember when making soups it is usually best to let them cook in a crock pot all day.A very simple chicken and potato recipe, any ideas?
CHICKEN STEW





1.5 lbs cooked chicken (no bones)


1 can chicken broth


1 can vegetable broth


3 cans of water


2 tbsp oil


6 potatoes, chunks


2 stalks celery chopped


1 onion chopped


green beans


yellow beans


carrots


cabbage


peas


corn





In a large pot, saut茅 the celery and onion in oil until soft. Add broths, chicken and water (use chicken broth can to measure 3 cans of water). Bring to a boil, reduce heat to simmer.


Add potatoes. Let simmer for about 30 minutes or until the potatoes are soft. Add vegetables; any favorite will do, frozen or fresh.





Simmer an additional 10 minutes until vegetables are tender.





Serve hot!! with fresh French stick bread.





Corn starch can be added as a thickener, but if you use extra potatoes and lots of vegetables it doesn't really need thickening

GINGER SESAME CHICKEN WITH BABY SAGE


POTATOES





Marinade:





1/4 cup wine vinegar


1 tablespoon soy sauce


1/4 cup olive oil








Chicken and Potatoes:





6 boneless, skinless chicken breast halves


1 cup Paul Newman's Own Low-Fat Sesame Ginger Dressing


3 cloves garlic, minced


1 shallot, chopped (optional)


sea salt and pepper, to taste


olive oil spray


6 baby potatoes


rubbed sage





Marinate chicken in refrigerator for 30-60 minutes in wine vinegar, olive oil and soy sauce. Discard marinade.


Place chicken in an ovenproof baking dish and brush generously with 1/2 cup Newman's Own Low-Fat Sesame Ginger Dressing. Sprinkle with minced garlic and shallot.





Scrub baby potatoes and remove eyes. Quarter or cut into halves (depending on size) and spray with olive oil spray, then sprinkle with a light dusting of rubbed sage, sea salt and pepper. Arrange potatoes around chicken in baking pan. Spray potatoes with additional olive oil spray during cooking if they become dry.





Roast at 325掳F for 20 minutes, then baste with remaining Sesame Ginger Dressing; turn oven to 375掳F and continue to cook until juices run clear, about 10-15 minutes more (depending on size of chicken pieces).
1/4 C green onions, chopped


1/2 C celery, chopped


3 T butter


2-3 potatoes, chopped


2 carrots


1 C cooked chicken


1 C chicken broth


1 can cream of chicken soup


2 1/2 C water


1 C milk


S %26amp; P to taste


1Chicken boullion cube


curry powder (opt. %26amp; to taste)





Directions


Saute' onions %26amp; celery in butter. Add potatoes%26amp; carrots with just enough water to prevent scorching.


Saute'


Add the rest - %26amp; simmer until potatoes are desired tenderness.


Simmer for about 1 to 2 hours





Now you can add noodles and peas if you like
maybe some salt and pepper but that sounds like a very simple and edible meal so you can try it and it probably would taste good
It really sounds more like soup.
