Pasta Salad with Oven-Roasted Tomatoes





The roasted flavor really lends itself well to this simple pasta salad.





5-6 medium tomatoes


1/2 cup olive oil, divided


12 oz. tri-colored fusilli


1/4 cup chopped green onions


1/4 cup fresh basil leaves, chopped


1 clove garlic, minced


1/2 tsp. salt


1/4 tsp. black pepper


1/2 cup shredded parmesan cheese





1. Preheat oven to 400 degrees. Cover baking sheet with aluminum foil and spray with cooking spray.


2. Cut tomatoes in half lengthwise. Scoop out seeds and juice. Place tomato slices, cut side up, on baking sheet. Season with salt and pepper and drizzle with 1/4 cup olive oil.


3. Bake tomatoes until slightly charred, about 50 minutes. Chop the halves into 4-5 pieces when completely cool.


4. Cook pasta according to package directions. Drain and cool.


5. Toss pasta with tomatoes, remaining olive oil and remaining ingredients.





Serves 6.





Mom's Linguine with Shrimp and Clams





Make the sauce without the shrimp and add the steamed clams when you add the canned.





6 Tbl. olive oil


3 garlic cloves, minced


3/4 cup finely chopped parsley


1 cup minced clams with liquid (canned)


1/2 lb. shrimp, chopped into small pieces


1/8 tsp. oregano


1/2 cup white wine or vermouth


1/4 tsp. cayenne pepper


1 lb. linguine


parmesan cheese, freshly grated





1. Cook linguine according to package directions.


2. While pasta cooks, heat olive oil in large skillet until hot. Add minced garlic and cook gently 5 minutes.


3. Add parsley, clams, shrimp, oregano, wine and cayenne. Heat until bubbling and shrimp are pink.


4. Add sauce to hot cooked pasta and dress with parsley and lots of fresh parmesan.

**********CHICKEN PASTA PARMESAN


2 tbsp. oil


1 lb. boneless chicken breast, cut up


1 c. mushrooms


1/4 c. chopped onions


2 tbsp. sherry


1 can cream of chicken soup


1/2 c. sliced peppers


1/2 c. grated Parmesan cheese


Brown chicken in oil. Remove. Cook onions and mushrooms in drippings, add sherry and soup. Heat through, add chicken and peppers, cover, simmer 10 minutes. Stir in cheese until melted. Serve over hot pasta.

Bacon Ranch Pasta Salad











Ingredients:


1 pack ROTINI NOODLES (the curly ones)





1/2 of a BELL PEPPER





1 SMALL RED ONION OR 1 tsp. onion powder





1 PKG CHERRY TOMATOES OR GRAPE TOMATOES OR ROMA (pear) TOMATOES, cut in half or diced





1/2 TO 1 Bottle KRAFT RANCH WITH BACON SALAD DRESSING (MUST BE KRAFT BRAND)











Directions:








Boil Noodles til soft.





Chop all veggies and place in bowl add enough dressing to coat veggies set aside.





When noodles are done and drained, add to veggies and add more dressing to coat as much or as little as you like.





Refrigerate at least 3 hours to chill well.





***You may also add in:





Bacon Bits (but it makes it very salty)
