Chicken and Stuffing Recipe

This easy crockpot chicken breast recipe is made with Swiss cheese, cream of mushroom soups, stuffing mix, butter and cream of chicken soup.





Ingredients:





鈥? boneless chicken breast halves, without skin


鈥? slices Swiss cheese


鈥? can (10 1/2 ounce) condensed cream of chicken soup


鈥? can (10 1/2 ounce) condensed cream of mushroom soup


鈥? cup chicken broth


鈥?/4 cup milk


鈥? to 3 cups Pepperidge Farm Herb Stuffing Mix


鈥?/2 cup melted butter *See Sandy's Notes


鈥alt and pepper to taste





Preparation:





Season chicken breasts with salt and pepper; place chicken breasts crock pot. Pour chicken broth over chicken breasts. Put one slice of Swiss cheese on each breast. Combine both cans of soup and milk. Cover chicken breasts with soup mixture. Sprinkle stuffing mix over all. Drizzle melted butter on top. Cook on low for 6-8 hours.





Notes: You can also mix the chicken broth with the soup and you get almost the same results. If you pour the broth over the chicken it keeps the chicken moist and tender. *I only used 1/2 the amount of butter called for, and would use more with another cup of stuffing mix next time.

Crockpot Herb Chicken With Stuffing





This easy chicken recipe is quick to prepare with cream of chicken and celery soups, chicken breasts, stuffing crumbs, and seasonings. Serve this chicken meal with your favorite side vegetables or a tossed green salad.





Ingredients:





鈥? can (10 1/2 ounces) cream of chicken with herbs soup


鈥? can (10 1/2 ounces) cream of celery or cream of chicken soup


鈥?/2 cup dry white wine or chicken broth


鈥? teaspoon dried parsley flakes


鈥? teaspoon dried leaf thyme, crumbled


鈥?/2 teaspoon salt


鈥ash black pepper


鈥? to 8 boneless chicken breast halves, without skin


鈥? to 2 1/2 cups seasoned stuffing crumbs, about 6 ounces


鈥? tablespoons butter





Preparation:





Combine the soups, wine or broth, parsley, thyme, salt, and pepper. Wash chicken and pat dry.


Lightly grease a 5 to 7-quart slow cooker. Sprinkle about 1/2 cup of the stuffing crumbs over the bottom of the cooker and drizzle with about 1 tablespoon of the butter. Top with half of the chicken, then half of the remaining stuffing crumbs. Drizzle with half of the remaining butter and spoon half of the soup mixture over that. Repeat with remaining chicken, stuffing crumbs, butter, and soup mixture. Cover and cook on LOW for 5 to 7 hours, or until chicken is cooked through.

SERVES 4:





4-5 boneless chicken breasts


1 (15 1/2 ounce) can black beans


1 (15 ounce) can corn


1 (15 ounce) jar salsa, any kind


1 (8 ounce) package cream cheese





Take 4-5 frozen, yes, frozen, boneless chicken breasts put into crock pot.


Add 1 can of black beans, drained, 1 jar of salsa, 1 can of corn drained.


Keep in crock pot on high for about 4-5 hours or until chicken is cooked.


Add 1 package of cream cheese (just throw it on top!) and let sit for about 1/2 hour.





All done. Serve with rice, pasta or tortillas, whichever you prefer or just by itself. Enjoy!
Instead of using a slow cooker, try poaching the chicken breasts. I think they retain their moisture far better then in a Crock.
