Does anyone have a chicken salad recipe that is made with apples, pecans, raisins and red onions?

Fruited Curry Chicken Salad


4 skinless, boneless chicken breast halves - cooked and diced


1 stalk celery, chopped


1/2 onion, chopped


1 small apple - peeled, cored and chopped


1/3 cup golden raisins


1/3 cup seedless green grapes, halved


1/2 cup chopped toasted pecans


1/8 teaspoon ground black pepper


1/2 teaspoon curry powder


3/4 cup mayonnaise











DIRECTIONS


In a large salad bowl combine the chicken, celery, onion, apple, raisins, grapes, pecans, pepper, curry powder and mayonnaise. Mix all together, tossing to coat. Salad is ready to serve!

Chicken Salad with Pecans/Apples





Things You鈥檒l Need:


A large bowl


2 chicken breasts, cooked, skinned, boned, and cut into small pieces


1 tart apple, Granny Smith or Pink Lady, diced


1 cup fresh pineapple, diced


1 cup seedless grapes, halved


1/4 cup raisins


3 Tbsp chutney


1 cup mayonnaise


1 陆 tsp curry powder


salt to taste


3 chilled, ripe cantaloupes, halved, peeled, and seeded


1 cup Pecans, coarsely chopped


Bibb lettuce leaves





Step1


The first step to making chicken salad with pecans with this recipe is to combine the chicken, apple, pineapple, grapes, raisins, chutney, mayonnaise, curry powder and salt in a bowl.

The next step to making chicken salad with pecans with this recipe is to cover the mixture and refrigerate 4 hours or overnight.

Then, at serving time, place a lettuce leaf on each plate.

Cut bottoms off of each cantaloupe half to form a thick ring and place on top of the lettuce leaves.

Finally, to complete this recipe for making chicken salad with pecans; mound the chicken salad in the center of the cantaloupe ring and sprinkle nuts on top.

Sure. Take several chicken breasts (boneless skinless, about 5-6), wrap them all up in a big blanket of aluminum foil (wrap all the way around and seal the chicken in) and put in a baking dish. Bake for 35 mins on 375 or until the chicken is fully cooked. Set aside to cool.


After cool, dice into chunks.





Chop up pecans, green apple, golden raisins, and some red onion and some celery. I like to add red grapes, halved, too!!!





Mix 1/2 cup mayo with 1/2 cup plain yogurt, 1 T fresh chopped tarragon, salt and pepper.





Toss everything together and serve!





I like to serve on beds of lettuce or with crackers or crusty italian bread.
I work as a chef and this salad always gets compliments.


Just throw it all in a bowl and drizzle with oil and balsamic vinegar. Lightly saute. Then serve with thousand island dressing
