Baked Chicken Breasts
* 1 cup sour cream
* 2 tablespoons lemon juice
* 2 teaspoons Worcestershire sauce
* 2 teaspoons celery salt, divided
* 2 teaspoons paprika, divided
* 1 1/2 teaspoons salt
* 1 teaspoon pepper, divided
* 3/4 teaspoon garlic powder, divided
* 6 chicken breast halves
* 3/4 cup crushed butter-flavored crackers
* 1/2 cup butter or margarine, melted, divided
1. In a large shallow bowl, combine sour cream, lemon juice, Worcestershire sauce, half of the celery salt and paprika, salt, and half of the pepper and garlic powder. Add chicken; turn to coat well. Cover and refrigerate at least 4 hours. Meanwhile, in a large bag or another bowl, combine crackers and remaining seasonings. Drain chicken, discarding marinade. Shake or dredge chicken in crumb mixture. Place in an ungreased jelly roll or broiler pan; drizzle with 1/4 cup butter. Bake, uncovered, at 325 degrees F for 45 minutes. Get a box of roasted tomato basil trisquits, and crush some up in a bowl. Put your chicken breasts in a glass casserole dish (big enough to hold as many pieces of chicken as your cooking). Pour your crushed trisquits over top with some slices of butter on each one, to keep them moist and to avoid burning the trisquits, and allow to back for about 30 minutes. be sure to check them occasionally for cooking time will vary given the size, amt, and if the breasts are frozen. this is a really easy cheap way to make some good baked chicken.
1 Cup of Parmesan Cheese
4 chicken breasts
salt and pepper
can of diced tomatoes with garlic, basil and oregano
I take chicken breast rinse them good and pound them almost flat with a meat tenderizer. I sprinkle them with a little salt and pepper.
Then I take grated parmesan cheese (not the powdered kind) and put it in a shallow dish.
Take the chicken breast and run them through the parmesan cheese till they are coated.
Get a non stick skillet hot and gently lay them in the pan (do not butter or grease the pan) . DO NOT TOUCH THEM or move them around for at least 5 minutes. After 5 minutes flip them over and cook the other side. Preheat your oven to 350 and finish cooking in the oven. (about 10 minutes)
Warm up the diced tomatoes in a small pan or microwave safe bowl and spoon on top.
I make this with some angel hair pasta and a salad.
1 stick of butter, melted
1 sleeve Ritz crackers
1/2 cup grated parmesan cheese
1 tbsp seasoning salt
1 tsp pepper
Put the crackers in a ziploc bag, crush with a rolling pin. Add cheese, seasoning salt and pepper, mix well in bag. With a fork dip the chicken in the melted butter then coat well (both sides) with the cracker mixture. Bake at 400 for 25-30 min.
Take the chicken breasts and pound them to no more than 1/4 inch thickness. Cut them in half, lengthwise if they are too thick.
Get three bowls; in one, put flour. Season this with salt/pepper. In the other, put egg; it can be one cracked egg or 2-3 egg whites mixed with a tbsp of water. In the third bowl, breadcrumbs, seasoned to taste.
Pat the chicken dry and dunk in the flour to coat. Shake off excess.
Now, dunk the floured chicken in the egg; coat and shake off excess.
Now, put the chicken in the breadcrumbs. Coat and shake off excess.
Do this with all the chicken.
Head oil in a skilled over med-high heat, until shimmering. Any oil will do.
Fry the chicken on each side until golden brown.
