CHICKEN KORMA
Serves 2
INGREDIENTS
375g of chicken breasts
1 clove of garlic
2cm (1 inch) piece of fresh ginger
2 onions
2 tablespoons of sunflower oil
200g (陆 a 400g tin) of plum tomatoes*
陆 a teaspoon of chilli powder
1 tablespoon of garam masala
陆 a teaspoon of ground turmeric
250ml of water
100ml (陆 a 200ml pot) of yoghurt
50g sachet of creamed coconut
METHOD
Chop the chicken into 1cm (陆 inch) pieces. Peel the garlic and chop it into tiny pieces. Peel the ginger and chop it into tiny pieces. Peel the onions and chop them into tiny pieces.
Put the oil into a saucepan on a moderate heat. Put the chicken, garlic, ginger and onions into the pan. Cook for 20 minutes until the chicken is cooked thoroughly. Stir frequently to stop it sticking.
Open the tin of tomatoes. Pour the juice into a bowl. Chop the tomatoes while they are still in the can (it鈥檚 easier than chasing them around the bowl). Put the chopped tomatoes into the bowl. Use half and save the other half.
Put the chopped tomatoes into the pan. Continue to cook, stirring as the mixture boils. Add the chilli, garam masala and turmeric and stir. Add the water. Bring to the boil, then turn down the heat until it is just boiling (simmering). Put the lid on the saucepan and cook for 10 minutes.
Add the yoghurt and the creamed coconut and mix thoroughly. Continue to cook for 10 minutes, stirring as the mixture boils, until the sauce has reduced.
ADDITIONS %26amp; ALTERNATIVES
Use turkey instead of chicken. Add 陆 a teaspoon of mint sauce to the leftover yoghurt to make some mint raita.
* Plum tomatoes can be used either whole or chopped. It is difficult to stick chopped tomatoes back together again if you need to use them whole.Need a recipe for chicken ...?
mexican chicken
1 kg chicken wings
1/4 cup dark soy sauce
1/4 cup vinegar
1 cup tomato sauce
1 tablespoon crushed garlic
1/2 tablespoon crushed ginger
1 tablespoon oil
Directions
1Marinate chicken wings in soy sauce, ginger, garlic and vinegar.
2Heat oil in non-stick electric fry pan.
3Place the marinated chicken and lightly fry.
4After 10 minutes, add the tomato sauce.
5Cook on low heat for about 30 minutes or until chicken wings are tender.
6Serve with the potato wedges or boiled cassava or dalo.
Baked Chicken #1
Marinate your chicken in Italian dressing for about 1 hour then roll in Italian style bread crumbs that have Parmesan and Romano cheeses mixed in - bake at 375 degrees F for 45 minutes to 1 hour depending upon how thick/big they are. Serve with roasted potatoes, a veggie or salad.
Baked Chicken #2
1 box of stuffing mix like Stove Top
4-6 boneless, skinless chicken breasts
1 can condensed Cream of Mushroom or Cream of Chicken soup - I like Campbell's but any brand will work
1/2 soup can of milk
1/4 cup bread crumbs - I like Italian style
1 cup shredded cheddar cheese
Preheat oven to 375 degrees F. In a small bowl, mix the can of soup and milk; set aside. Make stuffing mix according to package directions and spread into a greased 13x9 in baking pan. Place chicken pieces over the stuffing. Cover with the soup mixture. Sprinkle the shredded cheese and bread crumbs over the top of the chicken and bake for 45 minutes to one hour depending upon how thick you chicken pieces are. Serve with a green salad.
Prepared macaroni and cheese, rice pilaf or white rice can be substituted for the stuffing.
Baked Chicken #3
4-6 boneless chicken breasts
1 can cherry pie filling
Preheat oven to 375 degrees F and spray a baking pan with Pam or other non-stick spray. Arrange chicken on pan and spoon on 1/2 cherry pie filling. Bake for 30 minutes then spoon or brush on remaining pie filling and cook for another 30 minutes or until the meat is done. Serve with white rice, rice pilaf, roasted or mashed potatoes, a steamed veggie and a salad.

I love to cook with fruit and chicken - they are such a great combination of flavors. You can use any part of the chicken, but I prefer to use boneless chicken breasts.
Here is one way that I do mine: In a bowl, combine 1 cup sliced apples with a tablespoon of honey, teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, 1/4 teaspoon ground ginger, 3 tablespoons of sugar - you can use either white or brown sugar - and 1/2 cup apple juice or cider or pineapple juice - whichever you prefer and mix to combine; let sit while you brown your chicken in some butter in a heavy pan; pour apple mixture over your chicken, bring to a boil, cover and then simmer until chicken pieces are tender. You can substitute peaches - canned or fresh - for the apples or use canned pie apples if you do not have fresh. Cherry Pie filling is also another good alternative to simmer your chicken in.

Chicken Adobo (Filipino-style)--
Get a bag of chicken party wings (the kind used for hot wings), clean and put in a pot.
Mix together 1 cup soy sauce, 1 cup vinegar, 1/2 to 3/4 cup sugar (depending how sweet and tangy you like the sauce to taste), a head's worth of garlic (smashed), freshly-ground pepper (about a tablespoon or so--I like mine quite peppery as well), and a bay leaf or two.
Pour this mixture over the wings, then bring to a boil over medium high heat, stirring occasionally. Once at a boil, turn down heat to just below medium and simmer till chicken pulls away from bone and is tender, and sauce has reduced a bit.
Serve this with rice, or as an appetizer (my husband eats this like hot wings).
chicken cordon bleu
4 skinless, boneless chicken breast halves
1/4 teaspoon salt
1/8 teaspoon ground black pepper
6 slices Swiss cheese
4 slices cooked ham
1/2 cup seasoned bread crumbs
Preheat oven to 350 degrees F (175 degrees C). Coat a 7x11 inch baking dish with nonstick cooking spray.
Pound chicken breasts to 1/4 inch thickness.
Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a toothpick. Place in baking dish, and sprinkle chicken evenly with bread crumbs.
Bake for 30 to 35 minutes, or until chicken is no longer pink. Remove from oven, and place 1/2 cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted. Remove toothpicks, and serve immediately.
I love chicken kabobs. This recipe is easy and is very good.
Greek Style Kabobs
Marinade:
1/2 cup extra virgin olive oil
Zest 1/2 of a large lemon, then Juice
1 large clove garlic, minced
1 tsp dried oregano
1/2 tsp fresh ground pepper
1/4 tsp salt
4 boneless chicken breast
6 - 8 Metal or Bambo Skewers
Combine olive oil, lemon zest %26amp; juice, garlic,
oregano, salt %26amp; pepper. Mix well, set aside.
Cut chicken into 2 inch cubes, place in a plastic
zip-lock bag. Pour marinade over chicken. Release
air, seal bag %26amp; mix ingredients. Refrigerate 30 minutes
or up to 4 hours. Remove from refrigerator
15 minutes prior to cooking.
Heat Grill for 10 minutes. Thread 4 or 5 pieces
of meat onto skewers, leaving a little space
between each. (if using bambo skewers, soak 30 minutes).
Place on grill, cook for 2 minutes, turn and
cook 2 minutes, turn again %26amp; cook for 2 minutes.
Remove from grill, place on serving platter.
Let rest a few minutes. Carefully remove
chicken with a fork.

Chicken %26amp; Apple Fajitas
Ingredients
450 g (1lb brambly apples peeled, cored and thickly sliced
Juice of 1 lime
1 tbsps oil
2 medium onions thickly sliced
2 gloves garlic, finely chopped
1 鈥?2 red chillies, deseeded and finely chopped
1 tsp coriander
1tsp cumin
450 g (1 lb) chicken fillets cut into thick strips
Seasoning
1 tbsps fresh coriander, chopped
8 wheat tortillas
Method:
1. cut each apple slice in half and put in a bowl with the lime juice and toss together
2. heat the oil in a large frying pan, add onion and cook over a high heat for 2 mins, add garlic, chillies, spices and chicken then fry stirring for about 5 minutes until chicken is golden. Lift chicken out of the pan and set aside
3. Add apple with lime juice and 5 tbsps of water to the pan and cook with the onions for 3 minutes.
4. Return the chicken to the pan and continue to cook for a further 5 minutes, until apples are tender but still hold their shape
5. Heat the tortillas as directed on the pack. The quickest way is to transfer them to a plate, cover with film and microwave on high for 20 鈥?30 secs
6. Season filling with salt and pepper, then add fresh coriander.
7. To serve, place 2 heaped tbsps of filling in each tortilla, roll up and enjoy!
Roasted chicken is actually quite nice. Just salt and pepper it and put in the oven, or even the convection toaster oven. For more spice, use cajun seasoning. Try using kosher or sea salt and fresh ground pepper. The courser salt works better when cooking meat, for some reason.
Once your chicken is roasted, you might eat it plain with rice and veggies, or serve it on top of penne pasta with alfredo. Or, use marinara for a red sauce. If you want to get fancy, put the pasta in a pan, mix it with the sauce, and melt some mozzarela cheese on top.
Or, you can put your roast chicken on top of a chef salad, with onions, capers, bacon bits, and parmesan cheese, and croutons and all kinds of good stuff.
Or, try chicken and dumplings. Boil several thighs until they fall apart. Remove the bones and skin. Add salt and pepper to taste. Do not degrease. Cut some cheap small plain homestyle or buttermilk refrigerator biscuits into quarters. Do not use ones with ';layers';. Do not use the 'butter flavor'; extra big kind with big chunks of yellow grease in them. Drop them into the boiling liquid. Keep it at a gentle boil. Do not stir. This makes the dumplings fluffier, but watch for scorching.
Instead of dumplings, try adding some rice and making chicken and rice. Or, cook rice on the side, and have the option to serve it with and without rice. i like to do this because I don't want the rice to drink up all my good broth.
Or slice a boneless chicken breast in half to make a thin flat slice. Pound it out flatter, and pan sear or barbeque it with salt and pepper, or lemon pepper, or garlic salt, add some interesting bread like a seven grain wheat, rye or ciabatta, to make a tasty hot sandwich.
Or, make chicken kabobs. Marinate your chicken in teriyaki seasoning, and put on skewers with veggies like cherry tomatoes, bell peppers, onions, squash, etc. Put a bit of olive oil and seasoning, or marinade, on your veggies.
Or, pan fry onion and bell peppers, or broccoli and bite size pieces of chicken, add a bit of chicken boullion or stock, season and add a bit of corn starch mixed with water to thicken and serve over rice.
Or, make a chicken pot pie. Make a pan fry like mentioned above including veggies of your choice, then pour into a refrigerated pie crust and bake according to pie crust recipes until crust is brown.
Or mix up a good recipe of chicken salad for sandwiches.
Or pan fry sliced raw chicken with sliced onions and and a good cheese like cheddar or monterey jack and make philadelphia cheese chicken sandwiches.
Or, sautee chicken and onions, and add a chicken taco sauce, and serve with tortillas and shredded cheese. Add sour cream or guacomole if you want to get fancy, or serve on top of salad with nacho chips for a chicken taco salad.
Or, spread nacho chips on a pan, layer shredded cheese, layer shredded or chopped roast or taco style chicken, layer more cheese, and bake until cheese is melted for chicken tacos. Sauteed onions and chopped jalapenos is good on these.
What about a chicken pasta?
I love chicken lasagne:
Cut up some chicken breast, and sautee them in a pan.
Boil some mixed vegetables (like broccoli, corn, carrots, etc. whatever you like)
Add two jars of your favorite alfredo sauce, a dab of sour cream, and a dab or mayo, and a little butter to the drained vegetables
Stir in chicken
Boil noodles
Grease pan
pour chicken mixture into bottom of pan
line with noodles, add more mixture and sprinkle with cheddar cheese
continue this method ending with noodles and cheese on top
ENJOY!
if this doesn't work I love simply baking chicken with a can of golden cream of mushroom on top
parmesan chicken is FABULOUS and easy! this is what you do: dip boneless skinless chicken breast in italian dressing then coat in bread crumbs, place in baking pan, top the chicken with marinara sauce and mozzerella and parmesan cheese.. cover pan w.foil and bake covered for about 30 mins.
Our family likes chicken with either Cookies seasoning, or Lemon Pepper Seasoning, If youre grilliing just add some to both sides and throw on the grill. If youre baking it, Put it on a cookie sheet, add a little butter on the top, sprinkle with seasoning, cook at 350 for an hour.
Easy to make and tastes great.

coconut chicken is good...take some honey mustard sauce and dip the chicken in it...then dip it in crushed corn chex and coconut flakes and fry it up...delicious meal
I cut up chicken into 1inch chunks and fry in a pan till white and add a can of carrots and chicken gravy and pour over rice.
